Why does the NFL use Instant Replay when the Refs Still Can't Get the Call Right?

During the first quarter of today's Steelers at Raiders game, Ben Roethlisberger was hit by a linebacker in the backfield. As Roethlisberger fell, the ball came loose. The refs called Big Ben down by contact, and the Steelers kept the ball. Oakland challenged the play, and the replays clearly showed the ball coming out before Roethlisberger's knee hit. However, the play stood as it was called on the field.
Later in the quarter, Roethlisberger threw the ball downfield to WR Cedrick Wilson. Wilson dove forward, put both his arms beneath the ball, and made the catch before the ball hit the ground. All replays showed this to be a clear reception. Unfortunately, both the referees disagreed in real-time, so Cowher was forced to use a challenge. After the challenge, the play stood as called.
One play against the Raiders and one play against the Steelers were called wrong on the field. Even after the refs were given a second chance to make the call right, they still did not overturn the play. I realize there must be "indisputable evidence," but these refs are taking that term to the extreme. Admit your mistake.
In the referee crew's defense, they are playing down a man. The line judge sprained his ankle early in the game.
