just wanted to find out how one can add more names to a rating category such as the teams under soccer

Create the team page, and then stick it in [[Category:Soccer Teams]] and then they'll be there to rate.

Yeah, or you can just go to the Ratings Main Page, and if there's a Soccer Team list, then it'll automatically appear on there.

Yep, but I thought you could add to that list just by categorising them. Does it still need the ratings box (I didn't think it did?)

Actually, categorizing it will make it show up on the Soccer Team Ratings page, but you can't vote from the team page.
